Shake n' Bake

So, I am working on a post about the fabulous Retro BBQ I threw my friends for their wedding shower this weekend but in the meantime, I thought I’d share a simple tip for cooking veggies this summer.

I grilled chicken and vegetables last night for dinner. The prep work was made so much easier by what I like to call shake n’ bake.

 

Here’s the process:                                                 

I sliced all of the vegetables into similar size pieces

Then, I tossed them all in a recycled plastic bag (save your plastic target bags or produce bags etc)

 

Drizzled olive oil, squeezed some fresh lemon, minced garlic and a sprinkle of salt and pepper

Tie off the bag so the liquid does not leak

Then, the fun part: shake shake shake!

This makes sure all of the vegetables are evenly coated with the oil mixture and the best part is you can just toss the bag…no mess!

I placed the coated vegetables in tin foil and made little “packets” to put on the grill.

You can use this method for oven cooking also, just place veggies in an oven safe dish or cookie sheet.

I usually always coat the pan with tin foil to eliminate messy clean-up!

 

 

No mess delicious veggies in minutes!

** Yes! That is KALE... A delicious and very healthy option to add to your veggie mix. It is very hearty and can withstand the heat. It comes out delicious and compliments the other veggies.
