Makes 4 large slices or 8 Ciabatta or French bread slices
2 eggs, slightly beaten
½ cup fat free (skim) milk
1 tablespoon maple syrup
1 tablespoon orange juice (optional)
1 teaspoon orange zest
¼ teaspoon cinnamon or nutmeg (optional)
4 slices regular bread (or 8 slices
Ciabatta or French bread)
Mix all ingredients (except bread) in a flat dish until thoroughly blended. Lightly grease and heat skillet over medium heat. Dip bread into egg mixture. Allow bread to soak on both sides for a few minutes. Cook until golden brown about 2 minutes per side. Top with a splash of real Vermont maple syrup, yogurt or fresh berries or combination of these.
